There are two basic strategies for the single cook: cook BIG or cook small.
We all know about cooking small: the single portion. But that doesn't mean it has to be dull or plain. It also doesn't have to take a lot time. But we need to find adaptations of those dreaded "family-sized" recipes.
Another strategy is cooking large quantities and wrapping portions to pull out and use later, sometimes for a month to come. For this strategy we need large scale recipes that keep and/or freeze well.

and proud of it.
I don't believe that the answer to my prayers is a person to cook for or, worse yet, someone to cook for me.
Please, never assume that we are cooking single because we lost out in the game of life. Never assume we are the losers.
Please don't feel sorry for us.
Many of us are just fine the way we are, thank you.
I
LIKE my privacy.
LIKE my solitude.
LIKE my self-reliance.

Cooking for yourself can be a drag:
-
It's hard to go to all that effort just for one person. Especially the times when I'm not all that crazy about him.
-
It's always nice to have someone to appreciate, or at least notice, what you did. Sometimes, I even miss the complaints--at least someone was paying attention.
-
It's hard to buy the right qualities and things spoil. Either I cook variations on the same dish for a week or the Chinese cabbage ends up limp and brown and disgusting.
-
All the darn recipes are too big for a single serving.
-
When I talk with people about these issues, what I get is condescending pity. What I need, they say or imply, is to find a good partner and stop being a loser.
-
There really ought to be a place for those us who are proudly cooking for ourselves, just ourselves, and struggling to eat well and healthy, save money, and enjoy our solitude.
So here it is. The Single Cook.
